• 50g Butter, plus a little extra for greasing
  • 2 tbsp peanut butter or almond butter
  • 3 tbsp Maple Syrup or Honey
  • 2 Ripe Bananas
  • 1 apple, peeled + grated
  • 250g Rolled Oats (or gluten free oats)
  • 85g Dried Apricots, chopped
  • 100g Raisins
  • 100ml Hot Water
  • 85g Mixed Seeds (pumpkin or sunflower)
  1. Preheat Oven to 160ºc. Grease and line a 20cm tin, square or rectangle with baking parchment.
  2. Heat butter, peanut butter, maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water, mix to combine.
  3. Tip the oats, dried fruit and seeds in a large bowl. Pour in the combined banana, apple and stir everything until a moist mixture
  4. Tip into the cake tin and smooth over with a spatula. Bake for 45-50min until golden. Leave to cool for 5 minutes, then cut into 12-15 squares, leave in tin to fully cool.
